Today we’re making stuffed dates with peanut butter! Whenever we go to Palm Desert, we always stock up on a huge bag of Medjool dates. They are naturally sweet and bigger than most varieties, with a caramel like filling that’s perfect for a variety of recipes.
One of my favorite ways to prepare dates is stuffing them with goat cheese and wrapping them with bacon. Of course a homemade date shake is delicious too. But did you know that you can also stuff them with peanut butter for an easy and delicious dessert?
This Stuffed Dates with Peanut Butter recipe is a cinch to prepare. All you need is a bag of Medjool dates, a container of your favorite peanut butter, and some flaky Maldon sea salt.
What’s great about this recipe is that you can literally put it together 5 minutes before your company arrives. You just microwave the dates, remove the pits, stuff with peanut butter and top with salt. The result is a creamy, gooey and delicious medley that your guests will love. Feel free to use more or less dates in this recipe. You can also substitute your favorite nut butter in place of the peanut butter. Hope you enjoy it!

- 24 Medjool dates
- 1/2 cup peanut butter
- Maldon sea salt for sprinkling
- Microwave dates on a plate for 30 seconds.
- Remove pits with a slit in the middle.
- Stuff with 1/2 tablespoon of peanut butter & top with Maldon sea salt. Enjoy!
