When I’m on the road, I’m always game to try something new. Which is why I was so intrigued by The Betty, a peanut butter, pickle and cheese sandwich, at the PBJs food truck in Portland, Oregon. I thought the combination wouldn’t work, but it was actually pretty good!
Here are the ingredients for the Peanut Butter & Pickle Sandwich if you’re brave enough to try it yourself.
Peanut Butter, Pickle and Cheese Sandwich

I thought the combination wouldn’t work, but it was actually pretty good! Here are the ingredients if you’re brave enough to try it yourself.
Ingredients
- 2 slices challah bread
- 2 slices Gruyere cheese
- 6 bread and butter pickle slices
- White pepper and sea salt to taste
- Softened organic peanut butter
Instructions
- Spread a small amount of softened butter on the sliced bread. Fill the sandwich with the rest of the ingredients. Put sandwich together, butter side out, and grill on a pan until browned on both sides. You’ve got yourself one heck of a unique sandwich!
