Chorizo Queso Fundido

- 1/2 pound Monterey Jack cheese grated
- 10 oz. pork or soy chorizo
- 1 onion minced finely
- 2 jalapenos seeded and minced (reserve one for garnish)
- 1/3 cup good-quality Mexican beer or tequila
- 1 teaspoon garlic-shallot puree or 1 clove of minced garlic
- 1 to mato seeded and diced
- 2 tablespoons cilantro minced (plus more for garnish)
Instructions
- Saute chorizo with onions, jalapeños and garlic in a large pan. Stir in cheese, beer and tomatoes and heat until bubbling. Mix in cilantro before serving.
