Chorizo Queso Fundido

Chorizo Queso Funded makes a great appetizer for a football party.

This recipe for Chorizo Queso Fundido, also known as Mexican Cheese Dip, is perfect for a football party or any small gathering.

This Queso Fundido recipe uses chorizo, but it can easily be omitted from the recipe, or if you are a vegetarian, you can use a soy chorizo. Serve these with my homemade tortilla chips.

For this year’s Super Bowl, I’m making a Queso Fundido with Chorizo, also known as Mexican Cheese Dip. This Queso Fundido recipe uses chorizo, but it can easily be omitted from the recipe, or if you are a vegetarian, you can use a soy chorizo. Serve these with my homemade tortilla chips.

Use rubber gloves if you are working with fresh chiles.

Ingredients
  

  • 1/2 pound Monterey Jack cheese grated
  • 10 oz. pork or soy chorizo
  • 1 onion minced finely
  • 2 jalapenos seeded and minced (reserve one for garnish)
  • 1/3 cup good-quality Mexican beer or tequila
  • 1 teaspoon garlic-shallot puree or 1 clove of minced garlic
  • 1 to mato seeded and diced
  • 2 tablespoons cilantro minced (plus more for garnish)

Instructions
 

  • Saute chorizo with onions, jalapeños and garlic in a large pan. Stir in cheese, beer and tomatoes and heat until bubbling. Mix in cilantro before serving.
