These soft ginger cookies are a cherished recipe passed down in my family, courtesy of my step-mom, Debi. Every year, Debi fills our home with the intoxicating aroma of ginger and cinnamon as she bakes these delightful cookies for family gatherings and holiday potlucks. They’re the perfect embodiment of the season – warm, comforting, and bursting with flavor.

Ginger & the Holidays

Interestingly, the use of ginger during the holidays has a long and fascinating history. Ginger root, native to Southeast Asia, was cultivated in ancient China as early as 2400 BC. It was used not only for its culinary applications but also for its medicinal properties.

By the Middle Ages, ginger had found its way to Europe, becoming a prized spice for its warming properties and ability to aid digestion. It was often incorporated into sweet treats enjoyed during festive occasions, laying the foundation for the soft ginger cookies we know and love today.

Now, back to Debi’s soft ginger cookies. What makes them so special? It’s the perfect balance of flavors and textures. The combination of sweet, spicy, and peppery notes creates an irresistible taste sensation, while the soft and chewy texture melts in your mouth with every bite.

Ingredients:

  • 1 1/4 cups powdered sugar
  • 3/4 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/4 cup dark molasses
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

Baking with Love:

  1. Cream butter, sugar, molasses and egg together until fluffy.
  2. Mix dry ingredients together and stir into molasses mixture. Chill dough for at least 1 hour.
  3. Preheat oven to 375 degrees. Shape dough into balls and roll in granulated sugar. Place 2 inches apart on greased cookie sheet. Bake 10 minutes, or until the surface of the cookies crack.
  4. Cool slightly, then remove to wire racks to cool completely.
