French Purple Potato Salad

This French Purple Potato Salad recipe is tossed with tangy kalamata olives, capers and Dijon mustard. It’s a healthy potato salad that saves on fat, but not on flavor!

Purple potatoes have a flesh that ranges in hue from dark blue or lavender. Hailing from South America, they have a slightly nutty flavor. 

If you can’t find purple potatoes, any type of small waxy potato (such as red or new potatoes) will do for this purple potato salad recipe. Just make sure you don’t overcook them, or your salad will turn to mush. You want them to still have a little bite to them.

Purple Potato Salad Ingredients

  • Small purple potatoes
  • Kalamata olives
  • Green onions
  • Celery
  • Red wine vinegar
  • Dijon mustard
  • Capers
  • Olive oil
  • Italian flat-leaf parsley

How to Make Purple Potato Salad

  1. Dice potatoes.
  2. Next, boil in slightly salted water until soft.
  3. Combine potatoes, olives, onions and celery in a large mixing bowl.
  4. In a medium bowl, whisk together vinegar, mustard, and olive oil. Stir in capers and parsley.
  5. Season to taste.
  6. Finally, pour dressing over potatoes and toss until evenly coated.

Ingredients
  

  • 1 1/4 pounds small purple potatoes
  • 2/3 cup kalamata olives halved
  • 1/3 cup chopped green onions
  • 1/3 cup diced celery
  • 1 tablespoon red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 teaspoons capers drained
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • Pinch ground black pepper
  • 2 tablespoons chopped Italian flat-leaf parsley

Instructions
 

  • Dice potatoes. Boil in slightly salted water until soft, but not mushy.
  • Combine potatoes, olives, onions and celery in a large mixing bowl.

Making the Dressing

  • In a medium bowl, whisk together vinegar, mustard and olive oil. Stir in capers and parsley. Season to taste with salt and pepper.
  • Pour dressing over purple potatoes and toss until evenly coated.
