This Hawaiian Macaroni Salad Recipe comes from the famous chef Roy Yamaguchi of Roy’s Hawaiian restaurants.
I’m a big fan of Roy, so I thought I’d try his recipe out here at home. This is his mom’s recipe, and we think it tastes great! Feel free to spruce it up with your favorite add-ons, such as a little grated Maui onion, chopped celery, grated carrot and some green onions!
Serve this with my Hawaiian Garlic Shrimp Pineapple Boats.
Hawaiian Macaroni Salad
- 1 cup cooked macaroni about 4 ounces
- 1 1/2 cups mayonnaise
- 4 hard boiled eggs chopped
- 1 cooked potato chopped
- Salt and pepper to taste
- Mix all of the ingredients together in a large bowl and chill until ready to serve.
