Grilled Breakfast Burrito Recipe

This isn’t your average breakfast burrito; this is a flavor explosion waiting to happen! We’re talking chorizo sizzling with smoky spice, perfectly scrambled eggs, creamy shredded cheddar cheese, and the pièce de résistance: crispy tater tots (or frozen hash browns) that add a textural delight with every bite. Wrapped in a warm tortilla and kissed by the grill, this burrito is a symphony of textures and flavors that will leave you wanting more.

The Essential Ingredients: Your Breakfast Burrito Arsenal

  • Large flour tortillas: The foundation of your burrito masterpiece. Choose soft and pliable ones that can handle the heat without falling apart.
  • Spicy chorizo: The star of the show! Choose your preferred level of heat, from mild to fiery. My wife doesn’t eat meat, so sometimes we substitute soyrizo in the recipe. You can also substitute fried bacon, grilled breakfast sausage or even some vegan Morningstar sausages.
  • Eggs: The fluffy base for your burrito filling.
  • Shredded cheddar cheese: A melty dream, adding creaminess and richness.
  • Tater tots (or frozen hash browns): The crispy, textural counterpoint to the soft ingredients.
  • Chives: For adding a bit of oniony goodness.
  • Olive oil: For cooking the chorizo and eggs.
  • Salt and pepper: To taste, of course!

I recommend serving these with my homemade Mexican salsa and sour cream! If you like hot sauce, our favorite is Marie’s Sharp’s Habanero Hot Sauce. It’s sooooooo good. Cholula is also good for those who don’t want quite as much heat.

With its versatility, deliciousness, and satisfying crunch, this Grilled Breakfast Burrito recipe is sure to become your new go-to morning meal. So, grab your ingredients, fire up the grill, and get ready to experience a breakfast revolution!
