Salting Eggplant is an important step before making eggplant parmesan or any other eggplant recipe.

To prepare the eggplant, cut it into slices and place on a wire rack. Salt the eggplant and wait for the moisture to draw out of the eggplant. Pad with a paper towel and press out the rest of the water. It is now ready for your casserole!
