This Chipotle mayo recipe is delicious served with French fries, on fish tacos, or even with grilled artichoke.

This Southwest chipotle mayo recipe uses chipotles en adobo, a specialty product found in the Mexican food aisle of your supermarket. Although you can use chipotle sauce for fish tacos, it’s also great on sandwiches, wraps and as a spicy dip for artichokes. This chipotle sauce uses roasted garlic as its base, and is basically a spiced up roasted garlic aioli recipe.

Ingredients
  

  • 1 cup mayonnaise
  • 1-2 teaspoons minced chipotle peppers
  • 1-4 teaspoons adobo sauce from the chipotles or more to taste
  • 1 head roasted garlic cloves
  • 1/2 teaspoon kosher salt

Instructions
 

  • Blend by hand or in a food processor. Chill and serve.
