This incredible and authentic fajita marinade recipe was given to me by a Mexican chef named Gerardo when I worked at the UCR Catering Kitchen back in the early 1990s. It’s been my go-to recipe ever since — perfect for marinating both chicken and steak before throwing them on the grill.

Tips for the Perfect Fajita:
- Choose the Right Cut: For steak, flank steak or skirt steak are excellent choices. For chicken, boneless, skinless chicken breasts or thighs work well.
- Don’t Overcrowd the Grill: To avoid steaming rather than grilling, don’t overcrowd the grill.
- Serve with Fresh Ingredients: Serve your fajitas with warm tortillas, grilled onions and peppers, and your favorite toppings like avocado, sour cream, and salsa.

This marinade recipe has been a family favorite for years. It’s simple to make, incredibly flavorful, and perfect for any occasion. Give it a try and let me know what you think!
