During our recent trip to Kauai, we had the pleasure of experiencing a unique and delicious Li Hing Mui Rum Cocktail on the picturesque Loi Lanai at Kilohana Plantation. This refreshing beverage, called “The Landmark,” is the perfect blend of tropical flavors and a touch of Hawaiian flair.

Li Hing Mui Rum Cocktail

The Landmark cocktail — a specialty of the folks at Kauai Rum Safaris — is a refreshing blend of white rum, coconut rum, lime juice, and a homemade lemongrass and tangelo tea. Ingredients
  

  • 1 1/2 oz White Rum
  • 1/2 oz Lime Juice
  • 1/4 oz Coconut Rum
  • 2 oz Lemongrass and Tangelo Tea see recipe below (or use your favorite tropical tea)
  • 1/2 oz Coconut Water
  • Sweet Li Hing Mui Rim

Lemongrass and Tangelo Tea:

  • 4 cups water
  • 6-7 Tahitian Lime leaves
  • 1 inch lemongrass
  • 4 oz Cane Sugar
  • 3 oz lemon, lime or tangelo juice

Instructions
 

Lemongrass and Tangelo Tea:

  • Steep lime leaves and lemongrass in boiling water, turning off the heat once it boils.
  • Add sugar and dissolve.
  • Cool to room temperature.
  • Add lemon/lime juice.
  • Store refrigerated for up to 1 week.

To Create the Landmark:

  • Rub lime juice around the rim of the glass.
  • Dip the rim in sweet li hing powder.
  • Add ice to the glass.
  • Pour in the white rum, lime juice, coconut rum, lemongrass tea, and coconut water.
