Zion Canyon Pub Fries

If you’ve ever visited Zion National Park, you may have enjoyed Zion Canyon Brew Pub’s signature Pub Fries. This hearty and flavorful dish is a local favorite, and the perfect way to refuel after a long day of hiking or climbing.

We visited the Brew Pub twice during our trip to Zion. Its convenient location at the park’s entrance. The restaurant is divided into two sections: one side serves alcohol only, while the other offers a full menu. Both sides boast outdoor patios with stunning views of The Watchman and other iconic Zion landmarks.

Zion Pub Fries Recipe

Inspired by the Brew Pub’s delectable appetizer, I’ve crafted a recipe you can enjoy at home. Although you can certainly make your own homemade French fries, we’re using frozen fries for ease of preparation. This is a dish you may want to begin a few days before enjoying, since the jalapeño bacon jam takes some time to prepare.

Inspired by the Brew Pub’s delicious fries, I’ve created a recipe you can enjoy at home. If you’re ever in the area, be sure to stop by the Zion Canyon Brew Pub and try the original. Ingredients
  

  • 1 bag frozen French Fries prepared according to package directions

Jalapeno Bacon Jam:

  • 1/2 pound red fresno peppers
  • 1/2 pound green jalapeño peppers
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 1/2 cups white sugar
  • 2 1/2 cups water
  • 1 pound bacon browned and drained
  • Salt to taste

White Cheddar Beer Cheese:

  • 2 Tablespoons butter
  • 4 cloves garlic minced
  • 2 Tablespoons flour
  • 1 cup Amber beer such as Zion’s Springdale Amber or Red Altar American Style Red Ale
  • 1 teaspoon Dijon mustard
  • 4 cups grated extra sharp white cheddar cheese

Instructions
 

Make the Jalapeno Bacon Jam:

  • Remove stems and seeds from peppers and slice thinly.
  • Heat a large sauté pan over medium-high heat and add the olive oil. When the oil is hot, add the peppers and sauté until they soften.
  • Next, add the sugar, vinegar, and water. Bring to a boil.
  • Add cooked bacon. Lower heat and simmer about 30 minutes, until the mixture is thick and syrupy. Season to taste.

Make the White Cheddar Beer Cheese:

  • In a pot over medium heat, melt the butter. Add in the minced garlic and cook until translucent.
  • Stir in the flour and let cook for one minute.
  • Reduce the heat and slowly stir in the beer and mustard. Simmer for 5 minutes.
  • Stir in the cheese until melted.

Assemble the Fries:

  • On a sheet pan, prepare fries according to package directions until golden brown.
  • Top the fries with the white cheddar beer cheese and jalapeño bacon jam.
  • Serve with a Zion Pale Ale and enjoy!
