Few foods capture the flavor of the Hawaiian islands quite like Maui Banana Bread. Warm, moist, and packed with ripe bananas, it’s a staple you’ll find everywhere from roadside stands on the journey to Hana, to luxury resorts. During our recent trip to Maui, one of our favorite versions was served at the Wailea Marriott Resort, topped with crunchy pecans and toasted coconut flakes.

If you’ve been craving that same island treat, this recipe brings the flavors of Maui right into your kitchen.
The History of Banana Bread in Maui
Banana bread in Hawaii has roots in both necessity and abundance. With banana trees growing year-round across the islands, locals have long looked for ways to use up overripe fruit. When baking soda and powder became widely available in the early 20th century, quick breads like banana bread surged in popularity.
In Maui, banana bread evolved into something special. Local variations often include tropical ingredients like coconut, macadamia nuts, or even pineapple. Over time, it became a must-try food for visitors exploring the island.

Why Maui Banana Bread Is So Popular
There’s a reason Maui Banana Bread has reached near-iconic status:
It’s Made with Ultra-Ripe Bananas
The warm climate allows bananas to ripen to peak sweetness, giving the bread its rich flavor and natural moisture.

It’s Sold Fresh All Over the Island
From roadside stands along the Road to Hana to resort kitchens, banana bread is always within reach—and often served warm.
It Embraces Tropical Flavors
Coconut, nuts, and local ingredients elevate Maui banana bread beyond the traditional version you might find on the mainland.
Famous Spots to Try Maui Banana Bread
If you’re visiting Maui, these well-known stops are worth seeking out:

Resorts Like Wailea Marriott
Many resorts put their own spin on banana bread. The version we tried at the Wailea Marriott stood out with its delicious pecan and coconut topping—simple, but incredibly satisfying.

Maui Banana Bread Recipe (Wailea Marriott Inspired)
This Maui Banana Bread recipe is inspired by that memorable slice from the Wailea Marriott, complete with a crunchy coconut-pecan topping.
Ingredients
Batter
- ½ cup sour cream
- 1 1/2 cups mashed ripe bananas (about 3–4 bananas)
- 1 egg
- 3 tablespoons oil
- 1 ⅓ cups all-purpose flour
- ½ cup sugar
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chopped pecans
- ½ cup coconut flakes
Topping
- 2 tablespoons coconut flakes
- 2 tablespoons chopped pecans
Step-by-Step Instructions
1. Prep the Oven and Pan
Preheat your oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
2. Combine the Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking soda, and salt. Stir in the chopped pecans and coconut flakes so they’re evenly distributed.
3. Mix the Wet Ingredients
In a separate bowl, combine the sour cream, mashed bananas, egg, and oil. Stir until smooth and well blended.
4. Make the Batter
Pour the wet mixture into the dry ingredients. Gently stir until just combined—be careful not to overmix, as this can make the bread dense.
5. Transfer to the Pan
Pour the batter into your prepared loaf pan and smooth the top.
6. Add the Topping
Sprinkle the coconut flakes and chopped pecans evenly over the batter for that signature Maui-style finish.
7. Bake
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool and Serve
Allow the banana bread to cool in the pan before slicing. Serve slightly warm for the best flavor and texture.
Tips for the Best Maui Banana Bread
Use Very Ripe Bananas
The darker the peel, the sweeter and more flavorful your bread will be.
Don’t Overmix
Mix just until the ingredients come together to keep the texture light and tender.
Toast the Topping (Optional)
For extra flavor, lightly toast the coconut and pecans before sprinkling them on top.
