Bumbleberry Dream Bars

- 8 ounces Kerrygold butter at room temperature
- ¾ cup sugar
- 1 teaspoon pure vanilla extract
- 2 ½ cups all-purpose flour
- ½ teaspoon kosher salt
- 1 cup chocolate chips
- ¼ cup slivered almonds
- 12 ounces Bumbleberry or blackberry jam
Instructions
- Preheat Your Oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Cream the Butter and Sugar: In a large bowl, combine the butter and sugar. Beat with an electric mixer until light and fluffy.
- Add Vanilla and Dry Ingredients: Stir in the vanilla extract. Gradually add the flour and salt, mixing until just combined.
- Prepare the Base: Press two-thirds of the dough into a 9-inch square baking pan.
- Layer the Chocolate: Scatter the chocolate chips evenly over the dough, leaving a small border.
- Top with Almond Crumble: Combine the remaining dough with the slivered almonds. Crumble the dough over the chocolate chips.
- Dollop with Jam: Spoon dollops of Bumbleberry or blackberry jam over the almond crumble.
- Bake to Perfection: Bake for 45 minutes, or until golden brown.
- Cool and Cut: Let the bars cool completely before cutting into squares.
