One of their most beloved creations, Bumbleberry Dream Bars, are a harmonious blend of silvered almonds, gooey chocolate, and dollops of sweet Bumbleberry jam.

Ingredients
  

  • 8 ounces Kerrygold butter at room temperature
  • ¾ cup sugar
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup chocolate chips
  • ¼ cup slivered almonds
  • 12 ounces Bumbleberry or blackberry jam

Instructions
 

  • Preheat Your Oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Cream the Butter and Sugar: In a large bowl, combine the butter and sugar. Beat with an electric mixer until light and fluffy.
  • Add Vanilla and Dry Ingredients: Stir in the vanilla extract. Gradually add the flour and salt, mixing until just combined.
  • Prepare the Base: Press two-thirds of the dough into a 9-inch square baking pan.
  • Layer the Chocolate: Scatter the chocolate chips evenly over the dough, leaving a small border.
  • Top with Almond Crumble: Combine the remaining dough with the slivered almonds. Crumble the dough over the chocolate chips.
  • Dollop with Jam: Spoon dollops of Bumbleberry or blackberry jam over the almond crumble.
  • Bake to Perfection: Bake for 45 minutes, or until golden brown.
  • Cool and Cut: Let the bars cool completely before cutting into squares.
