Escape to Big Sur with these Lavender Margaritas inspired by Fernwood Resort. Enjoy the refreshing taste of this handcrafted cocktail from the California coast.
In a saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat until the sugar dissolves completely, stirring occasionally. Remove from heat and add 1/2 cup of dried culinary lavender. Steep for at least 30 minutes, allowing the flavors to infuse. Strain the syrup into a clean container and refrigerate until chilled. (This syrup can be stored in the refrigerator for up to two weeks.)
Prepare the Cocktail
Run a lime wedge around the rim of a margarita glass. Dip the rim in a mixture of coarse sea salt and dried lavender.
In a cocktail shaker filled with ice, combine the tequila, lavender syrup, lime juice, and agave nectar (to taste). Shake vigorously for about 15 seconds, until well chilled.
Strain the margarita into the prepared glass. Garnish with a sprig of fresh lavender, lime or strawberry.
