halved

chopped green onions
1/3

diced celery

red wine vinegar

tablespoons
Dijon mustard

teaspoons
capers
drained

tablespoons
olive oil

teaspoon
salt
Pinch
ground black pepper

tablespoons
chopped Italian flat-leaf parsley
Instructions
Dice potatoes. Boil in slightly salted water until soft, but not mushy.
Combine potatoes, olives, onions and celery in a large mixing bowl.
Making the Dressing
In a medium bowl, whisk together vinegar, mustard and olive oil. Stir in capers and parsley. Season to taste with salt and pepper.
Pour dressing over purple potatoes and toss until evenly coated.
