The Bengal Barbecue Chicken Skewers recipe is one of Disneyland's most requested recipes, especially since they are a relatively healthy option when compared to those amazing Corn Dogs!
1 1/2poundsraw chicken tenders or chicken breastcut into kabob size wedges
Skewers for grilling
Marinade
1cupteriyaki sauce
1cupsoy sauce
1tablespoonred wine vinegar
1cupbrown sugar
1/2cupsherry wine
2bay leaves
1tablespoonground pepper
3tablespoonsfresh grated ginger
2tablespoonsminced garlic
Polynesian Sauce
4whole cloves
1tablespoonred wine vinegar
1cupketchup
1/2cupcrushed pineapple
1/2cuppineapple juice
1/2cupbrown sugar
1/2cupsoy sauce
1/3cuporange juice concentrate
3tablespoonswater
Instructions
Mix chicken kabob marinade ingredients and marinate chicken for a few hours or overnight in the refrigerator.
Make Sauce: Simmer cloves in vinegar and pineapple juice for 5-10 minutes. Strain cloves and add the other ingredients. Bring mixture to a slow boil over medium heat. The sauce should be thick like barbecue sauce.
Preheat grill.
Soak skewers in water to prevent them from catching fire on the grill.
Skewer raw chicken chunks onto each kabob.
Grill kabobs, turning occasionally, until chicken is done and no longer pink inside, about 10 minutes.
Serve grilled chicken kabobs with plenty of sauce drizzled over.
