Peanut Butter, Pickle and Cheese Sandwich

When I’m on the road, I’m always game to try something new. Which is why I was so intrigued by  The Betty, a peanut butter, pickle and cheese sandwich, at the PBJs food truck in Portland, OR. I thought the combination wouldn’t work, but it was actually pretty good! Here are the ingredients if you’re brave enough to try it yourself. 🙂

Peanut Butter, Pickle and Cheese Sandwich

Serving Size: 1


  • 2 slices challah bread
  • Sliced Gruyere cheese
  • 5-6 bread and butter pickle slices
  • White pepper and sea salt, to taste
  • Softened organic peanut butter


  1. Spread a small amount of softened butter on the sliced bread. Fill the sandwich with the rest of the ingredients.
  2. Put sandwich together, butter side out, and grill on a pan until browned on both sides.
  3. You've got yourself one heck of a unique sandwich!
