Mexican Street Tacos

Down in San Diego, I’m addicted to a little restaurant called Tacos El Gordo. This Mexican street taco recipe is inspired by the restaurant. It uses steak flap meat that’s soaked in a citrus-cilantro marinade and topped with diced onions and chopped cilantro. Top this authentic street taco with my avocado salsa for the ultimate Mexican night. Good stuff!

  • 1 bunch green onions
  • 1-2 jalapenos
  • 1 lime, juiced
  • Fajita marinade (see my video)
  • Avocado Salsa (see my video)

  1. Marinate the steak or chicken in my fajita marinade overnight, turning once or twice.
  2. Preheat grill. Grill steak or chicken until done, and cut into cubes.
  3. Wrap tortillas in foil and heat on upper rack of grill.
  4. Grill green onions and jalapenos on grill.
  5. To assemble, place a small amount of steak in each tortilla and top with chopped onions and cilantro. Garnish with my avocado salsa and enjoy!

Hi, I’m Jason Hill, host of YouTube’s “Chef Tips” series. I went to culinary school in 1998, and worked as a chef for many years here in Southern California. Some of the great people I worked with included Homaro Cantu (Restaurant Charlie Trotter, Chicago’s Moto); James Boyce (Le Cirque, The Phoenician, Loews Coronado, Studio, Cotton Row),  and famed French chef Michel Richard (Citrus, Citronelle, Bistro M, Central). After quitting the restaurant business to start a family, I began writing a cooking column for several newspapers (Associated Press, Freedom News Service and Knight-Ridder Tribune), and launched my YouTube channel, “Chef Tips,” in 1997. I love sharing my knowledge of cooking with others, and I hope you enjoy my recipes!
