It may seem simple enough, but you’d be surprised how many people don’t know what “zesting” means. I use a special citrus zester, which I picked up at a local restaurant supply store, to do the job, but you can use a small sharp knife if you’re careful. The key is to remove the zest without grabbing any of the bitter white pith.
