Grilled Vegetable Kabobs

This simple recipe for grilled vegetable kabobs goes really well with seafood dishes such as my grilled king crab legs. Feel free to mix and match the ingredients with vegetables that you like. It’s a nice option to serve your vegetarian guests during a barbecue!
- 1 zucchini, sliced
- 1 yellow squash, sliced
- Whole mushrooms
- Red onions, quartered
- 1 box cherry tomatoes
- Marinate vegetables in a little melted butter and season with salt and pepper. Place on skewers and grill on barbecue until charred and cooked to your liking!
