Now, let’s get our hands dirty and whip up some magic!

Gathering the Goods:

Before we dive into the cooking, let’s ensure we have all the ingredients at hand. Here’s what you’ll need:

  • For the Fish:
    • 2 (6-ounce) mahi mahi fillets (skinless and cut evenly)
    • 2 cups of your favorite lemon herb marinade (store-bought or homemade)
  • Taco Time:
    • 8 corn tortillas (warmed for a delightful texture)
    • 2 cups of shredded cabbage (green or red, your choice!)
    • 1 fresh tomato, diced into small pieces
    • 1 small bunch of fresh cilantro, chopped for that vibrant touch
  • The Star of the Show: White Sauce:
    • 1/3 cup mayonnaise (full-fat or light, depending on your preference)
    • 1/3 cup plain yogurt (Greek yogurt for a thicker consistency)
    • 1 teaspoon fresh lime juice (adds a zesty kick)
    • 1 teaspoon chipotle hot sauce (adjust to your spice level)

Prepping the Fish:

Now that we’ve got our ingredients assembled, let’s get the fish ready for its starring role.

  1. Marinate like a Master: Place the fish fillets in a shallow dish and generously coat them with the lemon herb marinade. Cover the dish and let the flavors meld for at least 20 minutes (or even longer for an extra punch of zesty goodness).

Pro Tip: Don’t skip the marinating step! This allows the flavors to penetrate the fish, ensuring a juicy and flavorful bite in every mouthful.

Grilling to Perfection:

  1. Heat Up the Fun: Preheat your grill to medium-high heat. Once it’s nice and hot, lightly oil the grates to prevent sticking.
  2. Searing Success: Remove the fish from the marinade (discard the marinade) and gently place them on the preheated grill. Cook for 3-4 minutes per side, or until the fish flakes easily with a fork.

Know your Fish: The exact cooking time may vary depending on the thickness of your fillets.

This grilled fish taco recipe is topped with shredded cabbage, diced tomatoes and a fish taco white sauce for an authentic Baja-style taco. Be sure to top it with a squeeze of fresh lime juice and your favorite Mexican salsa. Try these with smoked mahi mahi for an extra special flavor!
