Grilled Fish Tacos Recipe

This grilled fish tacos recipe is a California favorite, originating in Baja, Mexico, and popularized by the original Rubio’s Fish Taco recipe in Mission Bay, San Diego. We prefer to use mahi mahi for our tacos, but you can certainly use any type of white fish. After marinating the fish in my lemon-herb marinade, place on the hot grill to cook, along with a foil packet of your favorite corn tortillas. Top these grilled fish tacos with shredded green or purple cabbage, cilantro and my fish taco white sauce alongside a cold Corona beer!

Grilled Fish Tacos Recipe

Ingredients

  • 2 six ounce pieces mahi mahi
  • 2 cups lemon herb marinade (see my recipe)
  • 8 corn tortillas.
  • 2 cups shredded cabbage.
  • 1 fresh diced tomato
  • Small bunch of fresh cilantro
  • Fish Taco White Sauce:
  • ⅓ cup mayonnaise
  • ⅓ cup plain yogurt
  • 1 teaspoon fresh lime juice
  • ½ to 1 tsp chipotle hot sauce, optional

Instructions

  1. Make up fish taco white sauce and let cool in the refrigerator for an hour or so.
  2. First rinse thawed fish under cool water and pat dry. Next, place fish in a plastic bag and pour the marinade over the fish. Seal bag and mix around with your hands.
  3. Marinade in the refrigerator no more than thirty minutes.
  4. Next, dice one tomato, and shred up some cabbage. Then go start your grill. If you don't have a grill, or BBQ, then you can either fry or bake your fish.
  5. After the fish is done, assemble your fish tacos straight away! Enjoy, and thanks for tubing in!
