Garlic Aioli with Chipotle

This Southwest garlic aioli recipe uses chipotles en adobo, a specialty product found in the Mexican food aisle of your supermarket. Although you can use this recipe on fish tacos, it’s also great on sandwiches, wraps and as a spicy dip for artichokes. The sauce uses roasted garlic as its base, and is basically a spiced up roasted garlic aioli. Feel free to make it without the chipotles for a traditional garlic aioli.

Garlic Chipotle Aioli


  • 1 cup mayonnaise
  • 1-2 teaspoons minced chipotle peppers
  • 1-4 teaspoons of adobo sauce from the chipotles
  • 1 head roasted garlic cloves
  • 1/2 teaspoon kosher salt


  1. Mix all ingredients together, chill and serve.
