2 1/2 cups oats (you can use less — 1 cup works). We use Coach's Oats.
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 oz. package good-quality chocolate chips
1 bar good-quality chocolate, chunked into pieces (optional)
1 1/2 cups chopped walnuts
Cream butter with sugars in mixer bowl. Add eggs and vanilla, beating well.
Mix flour, oats, salt, baking powder and baking soda in another bowl.
Mix butter-egg mixture with flour mixture just until blended. Add chocolate pieces and chopped nuts.
Roll into balls about the size of golf balls and place 2 inches apart on ungreased baking sheet. Bake on a pizza stone or Silpat sheet at 375 degrees for 10 minutes. It should still be a little soft when you take them out.
