BBQ Oysters

Recently, I traveled up to Tomales Bay to sample BBQ Oysters at a little place called Hog Island Oyster Company. It’s basically a little shack on the waterfront, where you can pick your own oysters, grab a picnic table, and cook them over a charcoal grill. While I was there, I learned that the secret to their BBQ oysters is a mixture of horseradish cocktail sauce and barbecue sauce. I recently bought some Fanny Bay oysters and went back to our friend’s house in Laguna Beach to make our own BBQ oysters recipe. Trouble was, I forgot my oyster shucker at home, so we had to shuck them after grilling, instead of before (which is my preferred method.)

Following is the recipe for BBQ Oysters with Horseradish Barbecue Sauce, as made at Hog Island Oyster Company in Tomales Bay.

Ingredients

  • BBQ Oysters, Hog Island Style
  • 2 dozen large oysters (such as Fanny Bay)
  • Horseradish BBQ Sauce:
  • 2 inches fresh horseradish, peeled and grated
  • 1/2 white onion, minced finely
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic-shallot puree, or 2 cloves minced garlic
  • 1 cup tomato sauce
  • 5 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1/4 cup honey
  • Fresh cracked Himalayan pink salt
  • Fresh cracked pepper

Instructions

  1. Prepare the barbecue sauce. Shuck oysters. Top each oyster with a dollop of barbecue sauce and grill a few minutes. Serve immediately.
